Crop keeps your cover sharp and full-bleed; just check the title and your name aren't too near the edge. Fit keeps every bit of the artwork and adds a border in a colour you pick (it starts with the colour of your cover's edges). Stretch changes the shape of everything, so lettering and faces look wrong; only use it for a tiny change.
If the resizer says your image is being enlarged, it'll look softer than the original: making a small image bigger can't add detail. Go back to your designer for the full-size artwork. Then run the result through the ebook cover checker.
